DIY: Candy Coal and Candy Cane Cupcakes

 Today is December 1st...Holey Moley! Today is already December 1st! Wow, what happened to November?!

Anyways, I thought it would be fun to share some Christmasy goodies. I shared these last year on my blog, but they are such fun, that I thought I would share them again!!


First, is the Candy Coal. This was a HUGE hit last year!
This was fun and easy to make. My friend Maggie and I sewed little bags out of canvas and hand painted them to look like little sacks of coal. Then, we filled them with our black peppermint candy (to look like coal) that we made.

Candy Cane Cupcakes

I thought it might be fun to bake some candy cane cupcakes, so I created a recipe! Mine turned out pretty good although, I ran out of powdered sugar so my frosting wasn't exactly how I wanted it. I had fun baking these and I hope you will too!






Don't those look yum! Here is my recipe.


Candy Cane Cupcakes


CUPCAKES:
1 1/2 cups all-purpose flour
1 large egg
1/2 cup butter, softened
3/4 cup cocoa powder
1/2 cup milk
1 teaspoon vanilla extract
1/2 teaspoon peppermint oil
1 teaspoon baking soda
1/2 teaspoon salt
1 cup granulated sugar
1/4 cup vegetable oil
1/2 cup hot water


1.  Place all the ingredients (except the hot water) in a bowl and beat with an electric mixer until smooth.

2.  Divide batter into lined cupcake pans and bake 20-24 minutes until cupcakes rise and a toothpick comes out clean when stuck in the center of one.

3. Let cupcakes cool completely before frosting.


FROSTING:
3  cups powdered sugar
6 tablespoons softened butter
1/4 cup milk
1/2 teaspoon peppermint oil
1 teaspoon vanilla
5-6 candy canes for garnish

1.  In a bowl mix together powdered sugar and milk with an electric mixer.

2.  Add the butter and mix.

3.  Add the vanilla and peppermint oil and mix well. (I also swirled a few drops of red food coloring in the frosting to make it look like a peppermint.)
**This is my rough estimate of what I created.You may need to add more powdered sugar or milk depending on the consistency of the frosting you want. You could probably cut this frosting recipe in half because when I made it, it made probably twice as much as I actually used.

Put your candy canes in a baggie and crush them up. I used a rolling pin. Frost each cupcake with the frosting and then top with the crushed candy cane. If you wait until you have all the cupcakes frosted before you add the candy canes then they won't stick as well.
