What better way to celebrate the first day of summer, than with a cold summer pasta salad recipe. Perfect for your next cookout or picnic with family or friends. I love this pasta salad because it's a great way to get in some spinach, which we all know is great for you!
I sort of just discovered this!
Cold Summer Pasta Salad
cheese tortellini (I use a big bag of frozen)
1 package frozen chopped spinach
1 pack of little red and yellow tomatoes (cherry tomatoes I think it was in German)
8 oz pitted black olives
Italian dressing (I usually use Wishbone Zesty Italian)
parmesan cheese
1. Cook the tortellini as directed on package and thaw your spinach under running water.
2. Mix together your cooked tortellini, spinach (squeezed of any excess moisture), tomatoes cut in half, and the olives.
3. Coat pasta with Italian dressing.
4. Top with a handful of shredded parmesan and toss well to mix.
Keep chilled in the fridge. Great to make at night for the next days lunch. I plan on taking this on our next picnic!
