Cheese and Onion Spaetzle {Recipe}


This recipe is modeled after my favorite German dish that we had at our hotel when we first arrived here in Germany and one that my Aunt had. We loved creating and perfecting this at home! It's like the German mac and cheese. It's a yummy comfort food for me!

Cheese and Onion Spaetzle

1 1/2 cup all purpose flour
2 large eggs
1/2 cup milk
4 tablespoons butter
1/4 teaspoon salt
1/8 teaspoon nutmeg
1 medium onion, sliced
Swiss cheese, about 1 cup
French's fried onions, about 1 cup

Mix together the flour, eggs, milk, salt, nutmeg and 2 tablespoons of the butter together to make the noodle dough. Bring a large pot of salted water to a boil. There are 2 ways you can cook these. Either put the dough mixture in a plastic ziploc bag and cut a little hole in one of the corners and squeeze dough into boiling water. Or, using a rubber spatula push the dough through the holes in a colander. Either way works, just whatever you prefer.

Once you've got all your noodle dough into the pot, cook for about 3 minutes or until the spaetzle float.

Heat the other 2 tablespoons of butter in a large skillet or wok and cook the onions until they are softened. When your spaetzle are done, add them to the skillet and fry the spaetzle until they are slightly browned.

In a large bowl mix together the fried spatzle and onions with about half of the fried french onions and the grated swiss cheese. Put into a small baking dish (9x9) and top with remaining fried onions. Bake at 350 for 20-30 minutes until cheese is melted.

Serves 4 people. (I admit, we've finished off this whole dish in a night before! Seconds anyone?!)


I like mine served hot with a cold glass of Riesling.
